Jeff’s Crunchy Chicken

Here’s a recipe I’ve been making for about 25 years. My kid’s love it and every time I make it for a party, people ask for it. I make it 2 ways both starting with skinless, boneless chicken breasts. The first way is prepared and served whole. The second way is cut up into smaller "nuggets"

Prep time 10 min/20 min; Cook time 30 min./ 25 min.

4- Skinless, Boneless Chicken Breasts
1- Package of Chicken Flavored Stuffing Mix
1- Cup of grated Parmesan Cheese
1- Stick of Butter or Margarine

In a large bowl combine the stuffing mix and the grated parmesan cheese. Set aside..

With a sharp knife, trim off any excess fat from the chicken. If you are making into nuggets cut them into smaller sized pieces.

Melt the butter in a medium sized bowl.

Wet the chicken in the butter and then roll in the stuffing mix making sure to press the mixture onto the chicken.

Place breast halves on a baking sheet and cook at 325 for 30 minutes. Cook the nuggets at 325 for 25 minutes.

The chicken will be done when the stuffing starts to get a dark brown.

Serve the nuggets with tooth picks and a good mustard in which to dip

My kids always fought over the crunchies that are left on the baking sheet. That’s why I call it “Crunchy Chicken”.
