Grilled Marinated Veggies


Here’s a quick and easy way to serve up fresh, tasty veggies that you can cook right on the grill. Red, Green, Orange, and Yellow Peppers, Zucchini, Yellow Squash, Mushrooms, Green Beans, and Eggplant are some of the varieties that will make your meal more attractive and healthful.

Wash, drain, and prepare veggies as follows:

Red, Green, Orange, and Yellow Bell Peppers- cut open lengthwise and remove stem and seeds. Cut halves into two or three large pieces.

Zucchini and Squash- remove stem. Slice small ones lengthwise then cut into roughly 4 inch pieces. Large ones can be cut into ½ inch thick circles.

Mushrooms- Small to medium white- Trim the stem and leave button whole. Portobello or Shitaki- leave whole or slice into large ¾ to 1 inch wide pieces.

Green Beans- Trim or break off stems and leave whole.

Eggplant- Peel the skin or leave it on, it’s up to you. Cut into 1-1/2 to 2 inch cubes, 1/2 inch thick circles, or ¾ inch by 4 inch pieces.

Wash and cut the veggies ahead of time and store them in an airtight container in the fridge, then add the marinade mixture an hour or two before grilling.

For the marinade, you can use store bought salad dressing. The non-creamy types work best, like balsalmic vinagrette or zesty Italian. Another favorite is Newman’s Own Parmesan & Roasted Garlic which gives the veggies a slightly tangy taste.

Pour the marinade liberally over the vegetables right in the Tupperware container and reseal the lid. Turn the container over a few times each hour to make sure the veggies are well coated. The longer you allow them to soak in the salad dressing, the more flavor they’ll have.

Cook the veggies right on the grill, or cover the grate with foil. Start with green beans first, then peppers since they take the longest to cook, then zucchini and squash, then eggplant, and finally mushrooms. Cook until just tender, turning once or twice. If you have a large group, cook the veggies first, and put them in a Pyrex baking dish on the grill to keep them hot. Then cook the meat or fish so everything will be done at the same time.

You can also try other veggie varieties. The only rule you need to follow is that the pieces should be big enough so they don’t fall through the grate into the coals. Enjoy!
